Word of caution on bear - cook well done or at least thoroughly. Bears can carry trichinosis, just like porkers.

If you would allow me to describe flavor with a color, Bison tastes more "red" than beef, and bear tastes much more "red" than bison.

not really a trail, more of a spray! hardly any blood left in it when it was field dressed,90% ran out the 2 holes
