i used to wrap the back straps in bacon too... but it's so hard to keep it all together, i just don't fool with it any more.
i do like to take my smoked deer sausage links and cut them into 1" pieces, top with a jalopeno, then a dollup of cream cheese and wrap with bacon like a wonton; pin with a toothpick and grill just like the dove/duck breasts you described and grill. mon aimee... ca c'est bon, oui!!!
