:) Looks great. I've tried 'um several times at a local restaurant but never made 'um myself :D Zat's rite! :mrgreen:

:) well lent has started so it's boring seafood dishes again on friday's :mrgreen:
Grilled redfish on the halfshell with a shrimp / mushroom topping ;)
redfish on the halfshell

fresh peeled lousiana shrimp

season fish with cajun seasoning & dill

Image
melt some butter with fresh garlic, garlic paste, soy sauce, white pepper for basting

add "bayou fireballs" hot sauce to taste
Image
in a skillet saute butter,onions,celery,mushrooms,handfull of chopped shrimp

add the rest of the shrimp and simmer covered while the fish are on grill

grill fish scales down on low heat until white through & through. don't over cook!

add your favorite beverages
Image
serve fish with shrimp topping, salad & garlic bread 8-)
hunt when it's cold; fish when it's not.

:? actually i got so rushed by the time my daughter & son-n-law got there i forgot to click one off after it was plated. :roll:

:( i have a confession to make :oops: we dont always eat like that :? tonite it was grilled shrimp fajitas! :lol: my wife said "enough with the camera ok!" :|

i just dry rub them with zatarain's seasoning... split 'um down one side leaving the ends closed; canoe style. season the inside with zat's and place sliced onions on the inside bottom half; then cream cheese; then jalopenos (fresh or pickled). close with tooth picks and cook on a hot grill for 15-20 minutes on each side. no more than that or the cream cheese will melt like ice cream! slice and enjoy! 8-)
:) another variation is to canoe, then marinate in soy sauce, and stuff with cream cheese, artichoke hearts & spinach. grill the same way. ;)

For the record, that is my go to dove breast and Duck breast recipe. I do the same thing + wrap in bacon. Once the bacon is done, so is the rest! Never thought of trying it on fish. I did pick up some speckled trout in Mobile bay last weekend, perhaps I will try it on them.
